I didn’t get a pm post up last night because I crashed into bed at 9 30! I told you I’m a nana. Last night’s dinner was brinner, or breakfast for dinner. This is one of my favorite meals. I cooked up Post Punk Kitchen’s Puffy Pillow Pancakes with vegan bacon rashers, and topped the pancakes with pure maple syrup- expensive but delicious!
There are two different pancakes in the picture because after I had made a couple of plain pancakes, I added chocolate chips to the batter for added amazeballs factor. Yummo!
Later on, another pancake and a couple more rashers went undocumented, along with breakfast-style mimosas. I know, I know, that is terrible mid-week behavior, but as I told Andrew, yesterday was Treat Tuesday! (Is anyone buying that?)
After dinner I watched some tv and then crashed early.
Breakfast this morning was a smoothie. In the mix: almond milk, half a banana, a splash of orange juice, ground flax, spinach and raspberries.
I always bring my smoothies to work and drink them slowly throughout the morning because they are the perfect pick me up for my early working hours. I was feeling dehydrated this morning (darn mimosas!) so I chugged a bunch of water, too.
For lunch I used the leftover bacon from last night to make a VBLT: vegan bacon, lettuce and tomato sandwich on seedy bread. I love this meal, and when I make it, everyone at work always starts poking their head out of offices and sniffing the air at the delicious bacon-y scent!
I stuffed my sandwich full with plenty of greens, tomatoes from my balcony garden at home, and some Praise 97% Fat Free mayonnaise, which is fortuitously vegan.
How gorgeous are these homegrown maters?!
They were the star of this sandwich.
For dessert I had a leftover Puffy Pillow Pancake with dark choc chips in it.
