Hello friends! It’s a beautiful Thursday afternoon, and summer is covering Adelaide with blue skies and warm sun. This is the view of the really old building next door from my office window:
Not great, I know, but at least I get the sunlight and a glimpse of sky!
I wish I wasn’t stuck at a desk inside. I really miss the days of being a university student full time. I didn’t know then how good I had it- going to a few classes a day and then having time to head to the beach, or shop, or just go to the gym or take long walks. I mean, I did work part time, and of course I had tons of coursework to do, but I still managed to find a lot of time to just relax and see my friends and enjoy the outdoors. Those were the days!
Now that I’m a full time worker though, I do have admit that I enjoy the perks that come with an income. For example: today I’m headed off to the spa for a one hour massage, one hour facial, and a pedicure! Amazing, right?! I purchased a Groupon for this spa package sometime in the middle of last year, and I am so ready to take advantage of it! With Groupons (or Scoopons or Spreets or whatever your city has), it’s always a bit of a gamble since you don’t usually know much about the company or have a referral from a friend, but hopefully this spa will be relaxing and everything I need after a long day at work!
I started my day in a rush this morning because I knew I need to leave early to get to the spa on time this afternoon, so I was hoping to get to work around 7 30am. A major fail on the waking up front resulted in me running like a madwoman to get the office at 8 15 and not really having any lunch or breakfast to take with me! I didn’t want to have to go buy anything today, so I decided to just eat whatever bits and pieces I could find hidden in my desk or that I’ve stored and forgot in the office kitchen.
I improvised with two pieces of seedy bread I keep in the work freezer and some raspberry jam, along with a mug of almond tea (try it! So good! ) and oat milk.
Around noon, I snacked on an apple that I sliced up and ate with a TB of PB.
An hour later, I found a chickpea cutlet in the freezer and heated that up in the sandwich press and ate it with a sliced up half of a red bell pepper. I’m not sure how long ago I made and froze this, but it tasted fine!
Don’t be fooled by appearances: these things don’t look all that appetizing, but they are chewy and savoury and good steak-knife eating for vegans. They have also attracted a bit of a cult following over at Post Punk Kitchen, the creators of this meaty serve of goodness. Seriously, people go nuts over these things.
I’ll probably have one more snack before I head to the spa at 3 30 so that I don’t get the tummy rumbles while supine and nude in front of a stranger, which I’m guessing will be my last grapefruit for the week and maybe some almonds. See you after my spa time!
