I planned to hit the gym before work again this morning, but that did not happen. Sleeping happened. Why is so hard to get up sometimes? I get so frustrated with myself when my brain can’t force my body out of bed. I am a grown-up in my late twenties, surely adults do this type of thing without it being a drama? Please tell me if you have any advice for getting out of bed early to workout!
Once I got to work I ate a Pink Lady apple with a TB of PB for breakfast. Coffee came later.
I haven’t a Pink Lady in ages- she was good, if slightly browned.
I’m struggling at work to create a strategy for the new year- I wish that was something someone else could do for me! Since we’re a small organisation, there isn’t anyone “above” me (aside from our company director) to tell me what to do, which is usually a good thing, but this week it’s left me wishing there was someone to say, hey, here is a list of things I need you to do in 2013! Does anyone else have this problem?
While working through my new year angst, I had lunch at my desk- another serving of veggie pita pockets.
Once again, these were served in a wholemeal pita that I halved and stuffed with lettuce, cucumber, green pepper/capsicum, mushrooms, and red onion. No tomatoes today because I forgot to pick them from the garden! I did almost get a little bonus nutrition in the form of this bug though:
Sick. No thank you, supposedly-pre-washed-salad-leaves. Other than that, the work day finished up without incident.
When I got home I prepped dinner and went straight to the backyard to get busy with the paint roller and my art brushes (for the details in the doors and drawers) on my big on my big old sideboard. One more coat and the masterpiece will be finished! In between coats, I had dinner.
I made these skewers and Max barbecued them for me. They had red and green peppers/capsicum, onions, Portobello mushrooms, pineapple, and marinated tofu. On the side, I made coconut rice with a hint of pineapple juice. I was worried the rice woud turn out really sweet, but it was lightly fragranced and was really tasty. I was actually planning to make quinoa with the skewers tonight, but I was out. Bummer!
My favorite thing to do is pull everything off the skewers and mix it in with the rice. This dinner is filling and really healthy- all those colorful veggies add vitamins, nutrients and fibre while the tofu and rice add protein.
This tofu was fantastic- crispy and coated with the perfect tofu marinade. I didn’t write down what I threw into it, but I’ll make it again soon and get a recipe up for you all to try!
After dinner and painting were all finished up, I went for a quick walk outside. I’ve just sat down to check in with you fine people and in a minute I’ll start my uni reading while enjoying these two dark chocolate Lindt squares.
One last thing- in the past I was updating my post with that day’s calorie burn as soon as possible the next morning. I took a little break over Christmas, but I’m going to start doing it again. I’ll put up today’s burn, intake and deficit asap tomorrow morning, when the data is complete. Have a good night!

I’m horrible at waking up let alone to work out! Thankfully I work early so I have no choice but to get out of bed and it lets me get to the gym before the crowds. I know I’d choose sleep over exercise if I had to work out in the morning!
See, that’s even more impressive! You go to the gym before you start your early job? Or do you mean that you go after work?
